The traditional Sauce for Calçots

In Catalonia a long standing tradition of family and friends gathering to celebrate the Calçotada is taking place during this time of the year.  The Calçotada is similar to an outdoor barbeque where spring onions called Calçots are cooked and then dipped in the traditional Salsa Calçots.

This famous Salsa is also known as “Salbitxada” made mostly from local produce such as roasted tomato, almonds, garlic and olive oil.   This sauce is very similar to the popular Romesco Sauce, the only difference being that the Romesco Sauce can be cooked but not the Salbitxada.   Both sauces are ideal for fish and meats but the Salsa Salbitxada is the only one to be used during a Calçotada!.

There are as many types of sauces for Calçots as there are cooks!  Every family that makes their own sauce, has their own secret ingredient, passing from generation to generation.

The Salsa Calçots Ferrer has become a key product for the Ferrer’s: traditional, artisan and representing the values of the family and brand.   Made from an original recipe of a local Chef from the area of Tarragona, the Salsa Calçots Ferrer, due to its well established distribution, has contributed to the expansion of this famous celebration throughout Catalonia and internationally!
