More than 100 years ago, in the town of Valls (Tarragona, Spain), the village got together to cook together that season’s "Calçots", an elongated sweet onion. The Calçots are roasted then cleaned and dipped in the famous Salsa Calçots. These gatherings take place from November to April and are very popular in the whole Catalonia Region. The Salsa Calçots Ferrer is made with fresh ingredients following traditional methods.
