Light the Barbeque until the coal is red hot and there are no flames.

Prepare the Calçots by cutting the roots off and some of the green leaves.

Place the Calçoots on top of the grill of the barbeque.

Turn them so that all sides are cooked.

The Calçots will be ready when they are completely black, the tip is soft and make "exploding" noises, as if they were trying to burst open.

Remove them from the barbeque and wrap them with newspaper in bundles of 30/40 units. This is to keep them warm and finish the cooking in their own heat.

Meanwhile, start setting the table with the disposable Tablecloth, which will be discarded once the Calcots have been eaten.

Dish some of the sauce Salsa Calçots in the bowls and make sure everybody is wearing their bibs! Place the Bread and Red Wine on the table.

Serve the Calcots by unwrapping them from the newspapers and placing 10 or 12 on each tile. Peal the Calçots with your hands until only the white part is visible. Dip the white tender part in the Sauce. Enjoy the delicious flavours and the mess!

Meanwhile, cook the Artichokes in the Barbeque, by just cutting their stalk and placing whole on the BBQ. Afterwards cook the various Meats.

Once the Calçots have been eaten, remove the Tablecloth and serve the Artichokes, the White Beans from Catalonia Ferrer previously sauteed, the various Meats and some Aioli Sauce. Try the Salsa Calçots with the Meat, as it makes a delicious combination.

We shall finish this fantastic Calçotada with some Oranges, Catalan Custard and Cava!
