Nourishing properties of "calçots"

Calçots are a variety of green onions, although milder, with a small bulb. They are lightly grilled in hot ashes and are supported at the base as they grow. Consumption of calçots or more popularly, calçotada, has become a well known gastronomic feast, especially in Catalunya. Calçots are usually eaten in the months of January, February and March, sided by a typical Romesco type sauce.
