The requirements of the new consumer are oriented to a higher demand in the safety and quality of the products. In the past years, the profile of the consumer has gradually acquired more knowledge, a louder attitude against risks and their information demands have increased. In order to respond to the consumer, all the agents concerned in the production chain have to maximize all measurements in order to ensure the safety of the food.
