INGREDIENTS: (for 4 people) •1 Kg of ripe tomatoes •4 tablespoonfuls of oil •3 eggs •½ small onion •1 spoonful of sugar •1 can of cooked peas •1 jar of Ferrer Pochas Beans METHOD: • Heat the oil in a pan then, add the finely chopped onion. Let it cook for about 10 minutes but not until it browns. • Add the cleaned and chopped up tomatoes. As they become blander, crush them up with a wooden spatula and let them cook for 15 minutes. • Pour the remaining sauce through a strainer and add it back to the pan along with the salt and sugar. • Thrown in the Ferrer Pochas Beans and half of the drained peas. Stir it all together. • Add salt if needed, and then transfer everything to an ovenproof platter. Add the rest of the peas. • Beat the eggs in a bowl, then, pour them on top. Put it in the stove to gratiné for 10 minutes (the amount of time for the eggs to become firm). • Serve immediately. |
