Rabbit skewers with escalivada and mushrooms

INGREDIENTS:
•400 g of Rabbit loin
•1 Green pepper
•1 Red pepper
•Salt
•Pepper
•Olive oil
•1 jar of Ferrrer Home-made Escalivada
•1 jar of Ferrer Mixed Wild Mushrooms

 

METHOD:

• Salt and cut up the previously drained Ferrer Mixed Wild Mushrooms, then, heat them in a pan.
• When they have cooked for 2 or 3 minutes, season them and add the escalivada (cut in 2 or 3 cm pieces).
• When this is finished, place alternating 2 cm-sized pieces of green and red pepper with the rabbit and mushrooms on a skewer. When they are full, fry them in a pan with some oil.
• For their presentation, make a base on a serving platter with the escalivada and put the skewers on top.
