Fish cannelloni recipe

INGREDIENTS: (serves 4 )

• 500 g of cannelloni pasta
• 400 g peeled prawns
• 100 g of mussels (without shell)
• 500 g of monkfish
• 1 medium-sized onion
• 2 or 3 garlic cloves
• Olive oil
• salt and black pepper
• Grated cheese
Ferrer Romesco Sauce
• White sauce

 

PREPARATION:

• Boil the pasta in a pot with plenty of water, salt and olive oil.
• Once boiled, drain it, put it through cold water and keep aside in a different container.
• Fry the garlic, the chopped onion, the prawns, the mussels, the bits of monkfish with the Ferrer Romesco sauce; and salt and pepper as desired.
• Proceed to grind the contents of the pan and stuff the cannelloni with the resulting paste.
• Once the cannelloni are ready, place them on a tray.
• Prepare a white sauce to spread over the cannelloni.
• Sprinkle the grated cheese and gratine in the oven.

NOTE:

The white sauce can be made with fried onion, butter, milk, salt and flour
